Apple & Thyme Roast Chicken Recipe: Spring Dinner Party Menu

Round off your main course with a scrumptious local chicken.  This fits perfectly into our simple spring dinner party menu, and you really can't go wrong with this simple recipe with fresh ingredients. 

 
Prep Time: 1 hour 45 minutes
Serves: 4-6
 
Ingredients

 

  • 2 apples, cored and quartered

  • 12 shallots, peeled

  • 2 tablespoons olive oil, divided

  • Bundle of thyme 

  • 1 3-4 LB chicken, rinsed and patted dry with paper towel

  • Kosher salt and cracked black pepper

Directions 
  • Preheat oven to 400°F

  • Chop apples & shallots

  • Place apples, shallots and half of the thyme in bottom of a roasting pan

  • Drizzle with 1 tbsp oil & season with salt & pepper 

  • Place remaining shallots and thyme in body of chicken and tie legs together 

  • Place chicken in centre of roasting pan and rub with remaining oil & season liberally with salt & pepper

  • Place in oven & roast until internal temperature reaches 160°F, about 90 minutes
