Beet & Blue Cheese Spread: Spring Dinner Party Menu

This beat based pesto-like spread will appeal to everyone on your guest list. This makes for the perfect spring-inspired appetizer that will tide over your guests until dinner is served and get them talking. Healthy, tasty, easy to eat and quick to make! 

Prep Time: 20 minutes
Serves: 12 servings 
  • 17 oz beets, cooked or roasted

  • 4 cloves garlic

  • 3½ oz parmesan cheese, grated

  • 3½ oz cashew nuts or pine nuts

  • ½ cup basil leaves

  • ½ cup olive oil

  • salt & black pepper, to taste

  • blue cheese (swap out with goat cheese if desired)

  • Place all the ingredients in a food processor and blend till smooth

  • Serve hot or cold

  • Sprinkle pine nuts and blue cheese on top

  • Best served with pita bread
