Peach Salsa

Sometimes it feels like we wait forever for that brief time period where peaches are in season. There is nothing better than the sweet, deliciousness of a perfectly ripe peach. Biting into that perfect peach, is complete bliss, and since we only have them for a short bit, taking advantage is a must and getting creative with them becomes a priority.

 

Although it’s easy to just devour a few of these all on their own at one sitting, there are some pretty interesting ways to incorporate this tasty treat in a more savory way.

 

With a little heat, some fresh herbs and a blast of lime, here is little switch up for the next time you want some salsa….make it peach!

 

INGREDIENTS

 

  • 2 cups of peaches diced

  • 1/4 cup minced red onion

  • 2 teaspoons minced jalapeno remove ribs and seeds before mincing to reduce the heat level

  • 1/3 cup chopped cilantro

  • the juice of one lime or more to taste

  • salt to taste

 

DIRECTIONS

 

  1. Place all of the above ingredients in a bowl and mix well, until combined. Cover and refrigerate for at least 30 minutes or up to 1 day.

 

This delicious salsa can be used as a straight up substitute for tomato based salsa. Try it with chips or use as a topper for chicken or fish.
